🍮 What is Rasomalai (রসমালাই)?
Rashomalai is a traditional Bengali dessert made from freshly curdled chenna (paneer-like fresh cheese) shaped into soft discs, lightly cooked in sugar syrup, then soaked in thickened, sweetened milk (rabri) flavoured with saffron, cardamom and rose water. Originating from the Bengal region, Rashomalai is considered one of the most refined and celebrated sweets in South Asian cuisine — a staple at weddings, Eid celebrations, and formal dawats.
